COURGETTI PAD THAI

Courgetti Noodles

2 courgettes

Toppings

2 whole eggs
1 tbsp roughly chopped coriander

Sauce

1 tbsp peanut butter
1 garlic clove, minced
2 tbsp freshly squeezed lime juice
1 tbsp fish sauce
1/2 tbsp soy sauce
1/2 tbsp chillies
1 tsp agave nectar

…Cooking Time!

  1. Spiralise the courgettes
  2. Scramble the eggs and set aside.
  3. Mix the peanut butter, garlic clove, lime juice, fish sauce, soy sauce, chillies and agave nectar in a pan over medium heat, and heat for 2-3 minutes.
  4. Boil the courgetti noodles for 30 seconds (no more!!) before adding to the pan with the scrambled eggs, cooking for another 30 seconds
    (N.B. try to drain the courgetti as it gets watery)
  5. Serve on a plate with garnish, corriander and lime wedges
