Bibimbap (serves 2)

Sauce / Seasoning

 

1.5 tbsp coconut oil
1/2 tbsp toasted sesame oil
2tsp soy sauce
1/2 tsp “gochugaru” sauce or chilli paste
1.5 tbsp chopped garlic
1 tsp chopped ginger
Pinch of salt & pepper

Toppings

225g lean pork
1 medium courgette
120g fresh spinach
35g spring onions
2 eggs
1 tsp chilli flakes
1 tsp white sesame seeds
120g brown rice

…Cooking Time!

  1. Cook the pork using ~1/2 sauce (adding coconut oil, soy sauce, garlic, sesame oil, ginger then gochugaru) for 5 minutes and place aside
  2. In the same frying pan, stir fry the rice with spring onions with ~1/4 sauce for 5 minutes and place aside
  3. Repeat with spinach for 2 minutes adding another ~1/4 sauce
  4. Spiralise courgettes and heat in frying pan for 30 seconds
  5. Fry eggs for 3-5 minutes until the egg whites are set and yolks are still runny
  6. Place toppings on the stir-fried rice and sprinkle with sesame seeds to finish
