Gluten Free Coffee Walnut Cake!
Sponge
  • 50g walnut pieces
  • 225g muscovado sugar
  • 225g soft unsalted butter
  • 200g gluten free flour
  • 4tsp instant espresso powder
  • 2.5tsp baking powder
  • 0.5tsp bicarbonate of soda
  • 4 large eggs
  • 1-2tsp almond milk

Buttercream Frosting

  • 350g icing sugar
  • 175g soft unsalted butter
  • 2.5tsp instant espresso powder
To Decorate
  • 10 walnuts
  • 10 coffee beans
…Cooking Time!
  1. Preheat oven to 180C
  2. Blend sugar & walnuts in processor
  3. Mix with rest of sponge ingredients
  4. Bake 2 separate layers for 20-25 mins each
  5. Mix frosting ingredients in blender
  6. Spread on cake & between layers, decorate with walnuts & coffee beans
