Loco Moco
  • 100g quinoa & whole grain rice
  • 1 egg
  • 1 avocado
  • Handful cherry tomatoes
  • 1 ruby gem lettuce
  • 100g ground beef

Sauce

  • 25g beef stock pot
  • 100g chestnut mushrooms
  • 1/2 large onion
  • 15g butter
…Cooking Time!
  1. Boil quinoa and rice
  2. In separate pan, add a dash of boiling water to beef stock
  3. Finely chop garlic and onion and cook with butter, adding thinly sliced mushrooms; add to beef stock
  4. Form ground beef into patties and fry, covering with a lid (approx 3-5 minutes per side)
  5. Simmer beef patty in stock, use pan to fry egg
  6. Serve with sliced avocado, tomatoes and seasoning
